Blueberry cake


2 C. butter-melted

5 C. powdered sugar

1 ½ C.  AP flour

1 ½ C. almond flour

1 tsp. Baking Powder

14 ea. Egg whites

Zest from 2 lemons

Juice from 2 lemons

2 C. fresh blue berries

1 TB vanilla extract


1)      Pre heat oven to 350

2)      Sift the sugar and the 2 flours, set aside.

3)      In mixing machine set to low beat the egg whites until semi soft peaks (do not over whip) and then add in the dry ingredients.

4)      Turn mixer to high and slowly drizzle in the melted butter

5)      Turn down speed and add in lemon juice and zest, once mixed in turn mixer off.

6)      In a large ring mold wrapped tightly with foil on bottom half fill a quarter of the way with cake filling, add blueberries and fill with a quarter more of the filling, do not fill more than half way when finished(will rise to much).

7)      Bake @ 350 for 20 minutes.
